Hanamaruki Co., Ltd. (Headquarters: Ina City, Nagano Prefecture, President and CEO: Shuichiro Hanaoka, hereinafter referred to as the Company), a miso and brewed product manufacturer, has announced the launch of a new product from Hanamaruki Jozo Koji Laboratory, which contains liquid salt koji. We have developed “Salt Koji Pudding” and “Salt Koji Ame.” This is a new flavor that brings out the charm of the ingredient by using liquid shio-koji, which until now had a strong impression as a seasoning, in sweets. “Salt Koji Pudding” will be on sale at the official EC site and “Roadside Station Oshiba Kogen,” and “Salt Koji Ame” will be on sale at the official EC site and directly managed store (Miso Making Experience Center).
[About salt koji pudding]
This is a self-made sweet made by adding liquid salt and koji to the famous “Omotenashi Pudding” from “Roadside Station Oshiba Kogen” in Kamiina, Nagano Prefecture.
Based on our classic melt-in-the-mouth pudding made with carefully selected ingredients such as locally branded milk and eggs, we added a combination of three types of liquid salt and koji to find the best balance. Each one is carefully handmade at the pudding workshop at Roadside Station Oshiba Kogen.

By repeatedly fine-tuning the formulation and taste, such as using “yeast fermented liquid salt koji” and “reduced salt liquid salt koji” in the pudding dough, and “liquid salt koji” in the caramel sauce, we have created a gentle salty and deep flavor. Finished with a flavor that allows you to enjoy the richness. The more you eat, the more complex the flavor becomes, making it so delicious that you will become addicted to it.
