This is an original variety from Ehime Prefecture that was selected and cultivated from approximately 31,000 plants over a period of 16 years by the Ehime Prefecture Agriculture, Forestry and Fisheries Research Institute.It has large grains, a firm chew, a gorgeous aroma and an elegant sweetness. Salt rice balls made with Himeno Rin rice, which is known for its unique characteristics, and Hojo Tai Meshi rice balls, a local dish of Hojo where a whole sea bream is cooked with rice, are grown in the fast-flowing, clean waters of Matsuyama. We will be serving rice balls made from Matsuyama Hijiki, a traditional treasure passed down by the islanders that is high in calcium and dietary fiber and certified as the Matsuyama Agriculture, Forestry and Fisheries Brand.
