Soybean flour bread mix that doesn’t require a home bakery
Due to its high nutritional value and gluten-free characteristics, soy flour is attracting attention as a substitute for wheat flour in home-made cookies and breads. On the other hand, there are many complaints, especially when making bread, that bread does not rise properly due to the lack of gluten. Against this background, we are launching a mixed flour specifically for bread making as a new product in the Daizu Labo soy flour series. There is no need to knead, just mix for 5 minutes and pour into a mold, so you can easily make bread. Also, anyone can enjoy making bread because it is baked in an oven rather than in a home bakery. We paid particular attention to the taste, and by using fine-grained soybean flour as the main ingredient, we achieved a fluffy texture with a pleasant texture. The combination of rice flour suppresses the soybean flavor and makes it easy to eat. Soybean flour is higher in protein and lower in carbohydrates than wheat flour. Compared to wheat flour, soybean flour has about 5 times the protein and dietary fiber, and about 1/3 the carbohydrate content, making it highly nutritious and healthy. It is high in protein and low in sugar compared to the rice flour used in gluten-free premixes. Although this product contains rice flour, it can make bread with 20% less sugar than the same amount of wheat flour.

Approximately 40% of monitor users answered that they make homemade bread at least once a week, and 75% said they make homemade bread at least once a month. As a result of collecting responses on a five-point scale from “I really agree” to “I don’t think so at all” regarding taste, convenience, and nutritional aspects, the highest number of responses that added “I really agree” and “I agree” was “It seems to be good for health” (98 %), followed by “Easy to make” (84%) and “Delicious” (72%).

The “Soy Flour Bread Mix” received over 60% in two categories: “No wheat flour/gluten-free” and “Just mix for 5 minutes and bake” due to its low carbohydrate content and protein content.

■Satisfaction points
When we surveyed the level of satisfaction with “how to make and use” and “taste and deliciousness” on a five-point scale, 83% were satisfied with “how to make and how to use”, while 64% were satisfied with “taste and deliciousness.” did. The taste and flavor of soybean flour is subject to differing opinions depending on taste, but the fact that soybean flour, which is said to be more difficult than wheat flour, received high ratings for “how to make and use” shows its potential in the future.
