Miyazaki & Kagoshima” will start. In addition, from the same day, we will start the “Ingredient Stamp Rally” where if you collect the “Umedo” stickers that the staff will give you every time you eat summer ingredients, you will be entered into a lottery to win gorgeous prizes.
We will focus on ingredients from Miyazaki and Kagoshima prefectures, which can be said to be the origin of Tsukada Farm, and we will prepare a special summer menu born from the connections with farmers, sake brewers, and production areas.

* Umeed in Miyazaki & Kagoshima ~ Tsukada Farm’s commitment and passion ~ * Tsukada Farm opened its first store in Hachioji, Tokyo in 2007 as an izakaya named after the company’s own chicken farm, “Tsukada Farm,” which they built in the Tsukada district of Miyazaki Prefecture. The genre of “a farm-style izakaya connected to the production area” was novel at the time, and the restaurant’s interior decoration conveyed the atmosphere of a harvest festival, as well as customer service with a sense of intimacy and enthusiasm, and the restaurant has been supported by many customers.
More than 15 years have passed since our founding, and while things like in-store background music and uniforms have changed with the times, our employees are still valuing the tactile feel that comes from the farm, and are now traveling to various locations to interact with the soil and water alongside the producers. While learning the background of ingredients, we are creating menus that are more delicious and tell the story of the ingredients.
This new menu was created by various members involved in Tsukada Farm, including producers, stores, and product development, in order to rebuild the connection with the production area, which has been weakening due to the influence of the coronavirus. farm
We gathered at the Miyazaki Main Store and sat around the table and talked about various things, such as the appeal of ingredients, the hardships of production areas, and the joys of producing them.This lineup has received the approval of all the producers.

The appetizer starts with a marriage of Miyazaki and Kagoshima. We use crunchy and sticky okra grown by Mr. Yunoguchi in Ibusuki City, Kagoshima Prefecture for “hiyashiru”, a well-known local dish of Miyazaki.
The somen noodles are kneaded with freshly harvested okra and topped with a chilled soup made by Michimoto Foods in Miyazaki City, Miyazaki Prefecture.
The scent of cucumber and ginger that tickles the tip of your nose makes you feel the arrival of summer.

Miyazaki prefecture’s traditional vegetable “Sadowara eggplant” has been revived from just four seeds.
Because of the simple cooking method of deep-frying, this is a masterpiece that lets you enjoy the flavor and texture of eggplant. A summer flavor made by marinating fried eggplant in soup stock and cooling it thoroughly.
The cool, melt-in-your-mouth texture and the thick eggplant make this a must-have dish for summer.

Bitter gourd champuru is luxuriously made with bitter gourd from Kagoshima Prefecture and Tsukada Farm’s special egg “Tsukadama”. Among the vitamin-rich summer vegetables, bitter gourd is particularly rich in nutrients and is said to be a staple for suppressing summer fatigue, and one of its characteristics is its unique bitterness. We used the richly flavored “Tsukadama”, chicken oil, and Jitokko soup as a secret ingredient to create bitter gourd champuru with the flavor of chicken.

The shiitake mushrooms are grown in a mountain village in Miyakonojo City, Miyazaki Prefecture, in a precious environment without pesticides or fertilizers, preserving ancient traditions, and are thick and luxuriously flavored. Add cheese to chicken-based fish cakes and stir-fry them with shiitake mushrooms. Although it looks cute like a macaron, it has a powerful flavor.

A rare type of shrimp caught in the deep sea at a depth of 400 meters from Akune, Kagoshima Prefecture, is a natural shrimp known for its sweet taste and plump texture.
Immediately after landing, fresh shrimp are quickly frozen for Tsukada Farm, processed to special specifications, and delivered. Takae shrimp, which have a distinctive plump texture, are simply fried with their shells on.

“Hebesu” is a traditional citrus fruit from Hyuga City, Miyazaki Prefecture that combines fruit juice, aroma, and richness.
Hebesu, which is larger than Sudachi and smaller than Kabosu, is a fragrant citrus fruit with few seeds and a thin skin that contains plenty of juice. We made sorbet by combining Hebesu fruit juice and milk. This cool sweet has a perfect balance of refreshing aroma and mellow flavor, making it the perfect taste for summer.
