Donut? Ryota Hirako is the owner and chef of the bakeries “Amam Dakotan” and “Dako,” which have long lines of customers. With Mr. Hirako as the general producer, a new brand will be born, its name is “SOBAP”.

All of our buckwheat crepes, “Sobap,” are made by hand, using only real ingredients, and each piece is carefully made in-store. By using gluten-free buckwheat flour, you can enjoy the original taste of the material, making it a great match with not only sweets but also side dish flavors.

[Shine Muscat (seasonal fruit)]
The egg-flavored diplomat cream is topped with plenty of delicate whipped cream made from pure fresh cream.
Combined with the freshness of summer-like Shine Muscat, it creates a refreshing taste.
As you continue to eat, a crispy butter-coated meringue appears, giving it a richer finish.

[Peach Caprese]
A fruit caprese made with plenty of seasonal peaches.
It uses milky and salty mozzarella cheese, peaches and oranges marinated in compote, and fresh mint.
Original egg white mayonnaise, pure fresh cream Chantilly, and sweet fruit go perfectly together.

[Corn]
Served with grilled corn coated with original teriyaki sauce, the corn itself is recreated in Sobaap style.
The bottom is filled with corn mousse made by mixing fete (fresh cream), making this soberp irresistible for corn lovers.

A logo inspired by 18 types of colorful Soberp.
Ryota Hirako supervised every detail of the brand name, design/concept design, store design, menu development, packaging, etc., and was inspired by the location of the store, creating a sophisticated storefront with the keyword “TOKYO” and palm-sized buckwheat flour. The naming and logo design emphasizes the loveliness of a crepe. In addition, the menu lineup incorporates many ideas unique to the chef, and includes up to 18 unique flavors, ranging from the classic deliciousness of crepes to unexpected combinations of ingredients and ideas that resemble single-dish dishes. Please enjoy.
