[About “Third Pudding “Airy”]”

– Developed to bring a new twist to the hardening/smooth debate. Pudding was introduced to Japan during the Edo period, and in 1993, Western confectionery store Pastel began selling smooth pudding. In the 31 years since, pudding has been sold in a variety of flavors and combinations, but there are new textures. Pudding did not appear. Before you know it, pudding has been divided into “firm” and “smooth” puddings, and the debate over which pudding is still going on.
In order to put an end to this, we set out to develop a pudding with a new texture, and through repeated trial and error, we created our third pudding, Airy, with a fluffy texture.

●Why can this be called the “third pudding”?
At our store, the definition of pudding is “coagulation by applying heat,” and “is it possible to make pudding using the same process by replacing the raw materials with only “milk,” “egg,” and “sugar.” Puddings that do not meet these criteria are not called puddings.
“The third pudding ‘Airy'” satisfies the conditions defined above, so we thought it would be safe to call it a pudding at our store.

However, this pudding manufacturing method makes the impossible possible, and is a completely new sweet created using a revolutionary manufacturing method that has never been seen before.
The technology was so innovative that we applied for a patent. By making meringue from the egg white part of the eggs used in the pudding and combining it with the pudding batter, the pudding has a new texture that is light and melts like a freshly baked soufflé, and is unlike anything you’ve ever eaten before.
