At the Hokuriku Fair Buffet, we will offer ingredients and local cuisine from the three prefectures. Toyama Prefecture is a treasure trove of seafood that brings you seasonal flavors throughout the four seasons; Ishikawa Prefecture is a fusion of different histories, lifestyles, and food cultures that have flourished in each region, including areas surrounded by the sea and areas with wide open plains; and Ishikawa Prefecture, which is rich in nature. Our chefs specialize in Japanese, Western, Chinese, and sweets, offering charming traditional cuisine and specialty gourmet food from Fukui Prefecture, an environment blessed with the bounty of the mountains and the sea, and ingredients nurtured by clean water. We will use our skills to provide you with an original menu.

As for Japanese cuisine, we will be serving “Mettajiru”, a local dish from Ishikawa Prefecture. It is a hearty and filling dish that uses root vegetables such as sweet potatoes, daikon radish, and carrots, as well as konnyaku and green onions. In addition, “Fukui prefecture sagoshi sagoshi sesame yuzuan grilled” is a dish with autumn-like “momiji fu”, which is made by marinating Fukui prefecture sagoshi with good fat in the sesame and yuzu flavored yuzuan and grilling it. The light-tasting sesame puffer fish from Ishikawa Prefecture, caught only on the Sea of Japan coast during this period, are served fried with a soy sauce-based seasoning.
As for Western cuisine, we offer “Toyama prefecture pounded yellowtail carpaccio” which is grilled on the surface. The fatty yellowtail goes perfectly with the refreshing onion and lemon sauce. “Fukui prefecture large-sized fried chicken”, which is thick and heavy, is served with a gado-gado salad that allows you to enjoy plenty of vegetables. “Kanazawa Curry” is a perfect match between the rich roux and crispy pork loin cutlet, and its subtle spiciness and sweetness are appealing. Top with shredded cabbage and sauce and enjoy.
As for Chinese cuisine, we will serve boiled pork shoulder loin seasoned with the local gourmet “Toyama Black” soy sauce. You can also enjoy double-pot meat with the rich flavor of miso, using Ishikawa Prefecture’s “Tori Yasai Miso”, which is made from rice miso made from soybeans and rice malt, mixed with several seasonings and spices. In addition, please enjoy the fried rice with Heshiko, a local dish from Fukui Prefecture that is made by marinating fish in salt and rice bran. The fermented aroma and salty taste of “heshiko” is addictive, and it is a masterpiece that goes well with pickled mustard greens. Sweets include “Kagabo Hojicha Verrine”, which has a unique aroma and was born in the Kaga region of Ishikawa Prefecture, “Matcha chiffon cake made with rice flour from Toyama Prefecture”, which has a moist and fluffy texture, and products from Fukui Prefecture, which are characterized by their melting sweetness. Please enjoy Mont Blanc made with sweet potato “Tomitsu Kintoki”.

Please enjoy “64℃ Finished” or Crossdyne’s recommended “Beef Stew” or “Beef Stroganoff” with butter rice. Don’t miss the pizza baked in our proud pizza oven. For Japanese cuisine, please enjoy “vegetable and lamb shabu-shabu” with a special “seafood shellfish soup stock” made with seasonal shellfish, as well as sushi available only at dinner time, where the chef will perform on the spot.
In Chinese cuisine, we offer a variety of flavors that pursue the richness and umami found within the spiciness unique to spices.
