Hiroyasu Kawate
Owner chef of French restaurant “Florelege”
Born in 1978 in Tokyo. His parents and relatives were chefs, so he grew up in an environment where cooking was so familiar to him that he couldn’t think of anything else than becoming a chef from an early age. After joining “Q.E.D. CLUB” in 1997, he moved on to “Ohara et CII” and “Le Bourguignon,” where he studied under chef Mimasu Kikuchi. Serves as sous chef. He moved to France in 2006 and trained at the Jardin des Sens. Since 2007, he has been working as a sous chef at Quintessence. In June 2009, he became independent and opened “Florerege”. Selected as one to watch in Asia 50 Best in 2016. Received two stars in the Michelin Guide Tokyo for seven consecutive years since 2018. In 2020, our sister restaurant in Taiwan, logy, also received two stars in the Michelin Guide Taipei 2020.

He came to Japan in 1995 and gained experience at the then world-famous Odaiba branch of the Hong Kong-based restaurant Hong Kong Kaisen Shuka, before joining Conrad Tokyo in January 2006. Under former head chef Albert Tse, he learned modern Chinese cuisine that captivates people with its various styles of cooking and innovative presentations.
