Origin of “Chanko Nabe”
It was during the Meiji era that people started eating hot pot in sumo stables. It all started when the 19th Yokozuna, Dewaumi Stable, made nabe the main meal in his sumo stable. There are various theories about its origin, but it is said that it originates from the relationship between master and disciple in a sumo stable, with the master as “father” and the disciple as “ko”, and they eat together, hence the name “chanko.” It is said. It also contains a well-balanced mix of vegetables, mushrooms, tofu, and meat and fish, and since it’s simmered, it’s easy to digest, warms your body, and improves your metabolism. It is one of the healthy dishes born from the Japanese climate.
About “Chanko Edosawa”
Founded in 1971, we have inherited the traditional taste from our founder, a former sumo wrestler. At Edozawa, we are particular about the original sop (= soup) cooking method for Chanko nabe, and we use “Hinedori” (old chicken), which has a particularly strong umami flavor, to cook the soup.The seasoning is done so that you can feel the flavor and aroma of the chicken soup. We offer three types of soups, including our signature soy sauce flavor, which is blended with a unique ratio, miso flavor, and salt flavor.

Chicken Sop Nabe… Sumo stables in the old days were poor and their lives revolved around fish dishes. Even though meat was sometimes eaten, it was said that meat with four legs was avoided because it would lead to “making a move = losing”. Among them, chicken is considered to be auspicious because it has two legs, and has been admired since ancient times as one of the few luxurious and important dishes. Old chicken, which has the strongest flavor among chickens, is placed whole in a pot and simmered in a secret chicken sop (= soup). This is an authentic Ryogoku chicken sop hotpot that is full of flavor and cannot be tasted at home.

We are particular about the combination of 12 ingredients, considering the taste and nutritional balance. By adding moisture and flavor from several types of vegetables to our signature soup, we create a uniquely flavorful hot pot. We carefully prepare our chicken bones every morning. In winter, we run soup kitchens twice a day.
