At Nishikiya Kitchen, we have spent 14 years since 2010 traveling to India, the home of curry, and have continued to study Indian cuisine by visiting restaurants and participating in local cooking classes. Although we were forced to temporarily suspend our training due to the coronavirus pandemic, we have held approximately 20 training sessions in India so far and are still making authentic-tasting Indian curry. In the past, we released biryani as a base for cooked rice, creating biryani with a rich aroma of spices, but we wanted people to enjoy biryani more easily, so we started working on developing rice products in 2022. Ta. This is Nishikiya Kitchen’s first rice product, and after about two years of development, we were finally able to commercialize it.

In keeping with the authentic Indian style, we use basmati rice, and add chicken and curry leaves from Zao, Miyagi, to create a fragrant dish. To go well with chicken biryani, we use a combination of individual spices and Nishikiya Kitchen’s original North Indian style garam masala to create a fragrant dish.

Most biryanis use meat, but in India, where there are many
vegetarians, there are also biryanis that only contain vegetables. Vegetable biryani is a simple combination of vegetables and spices, with a flavor that brings out the aroma of the spices.
In keeping with the authentic Indian style, we use basmati rice, and the ingredients are carrots, green beans, and curry leaves from Zao, Miyagi, for a fragrant finish.

Curry leaves are one of the essential spices for South Indian curry. It was important to use fresh curry leaves, as dried curry leaves lose their flavor. It was difficult to stably obtain raw curry leaves in Japan, but with the help of farmers in Zao, and after four years of trial and error, we were finally able to produce curry leaves. When cultivating curry leaves, a tropical plant, in Zao, we cultivate them in greenhouses that are warm even in the winter, in an effort to bring them as close to the authentic Indian environment as possible.
