[Ginza/Wako] A new “Amazing” parfait is now available at the tea salon specialty seasonal parfait

The theme Wako aims for in 2024 is “AMAZING
WAKO”. Based on the rich Japanese culture such as the history, traditional techniques, and customs that we have cultivated since our founding, we plan products and experiences that will surprise and move you. At the tea salon, we have devised a special new parfait, “‘Amazing’ Parfait – Autumn Promenade,” with the desire for our customers to enjoy an “amazing” moment.
This is a dish created by the chef that uses the flavors of autumn luxuriously and is gorgeous to look at. Mainly parfaits and cakes made with plenty of specially selected pure Kumamoto Japanese chestnuts, “Mikuri,” and tuiles in the shape of fallen leaves, chestnut pound cake, and cacao streusel to represent a fruitful autumn promenade. With three types of special sauces that allow you to enjoy changing flavors, the attention to detail is truly amazing, allowing you to enjoy the harmony of flavors and textures to your heart’s content. A perfect item for a special autumn moment.

■Detailed explanation
* Amazing style of cake-on-parfait! *
The top cake is a Mont Blanc made with Japanese chestnuts from Kumamoto Prefecture on top of the sable, and the yuzu tuile adds a touch of glamor. The glass parfait consists of chestnut ice cream, caramel ice cream, Japanese chestnut cream, crunchy puff pastry, and mellow fresh cream, and at the bottom is Japanese black tea jelly with diced apples. The combination of the moderate sweetness of chestnuts and apples and the elegant aroma of Japanese black tea creates a delicious harmony.

To further enjoy the parfait and cake, we have created three special sauces: persimmon, sabayon (Western liquor), and mitarashi. The ginkgo that colors the plate is yuzu, and the maple is cassis tuile.
