At the Japanese Sake Information Center, we offer approximately 20 selected items each year from a group of attractive seasonal products so that you can enjoy Japan’s four seasons. We have a wonderful lineup of “Hiyaoroshi” available until October this year, so please come and enjoy this limited time sake.

The Japan Sake Brewers Association (hereinafter referred to as the Central Association), the largest organization in the Japanese sake industry to which approximately 1,600 alcoholic beverage (sake, authentic shochu/awamori, and hon mirin) manufacturers belong, is a group that provides opportunities to experience and learn first-hand the appeal of Japanese sake. “Hiyaoroshi” has been loved by the common people since the Edo period as an autumn tradition. Sake is produced from the fall after the new rice harvest is finished to the spring of the following year. After pressing, the sake is sterilized by low-temperature heat called “hiire” before being stored in a brewery. By letting the sake sit in a cool warehouse during the hot summer months, the rough edges of the new sake are removed in early spring, resulting in a mellow, fragrant sake with a smooth finish. The characteristic of “Hiyaoroshi” is that you can enjoy both the freshness of new sake and the
well-crafted, mellow taste. This is a special seasonal sake that is only available now.
At the information center, we select approximately 20 items from a group of attractive seasonal products each year and introduce them to visitors one by one until October. We have a wonderful lineup this year as well, and you can not only sample but also purchase at reasonable prices that only the Information Center can offer.
