■* ~Development background~ Responding to environmental changes and proposing new deliciousness with high sustainability*
When it comes to ramen, one of the classics is “tonkotsu ramen,” which is rich and filling, but the price of pork, the main ingredient, continues to rise. It is expected that the price of ingredients will continue to rise in the future, and using high-quality ingredients will result in higher selling prices and a greater burden on customers.
In addition, stores that serve tonkotsu ramen have to dispose of the soup stock that they use every day.
We took on the challenge of selling “beef bone” ramen with the desire to “offer high-quality products at a better value” and “want to minimize waste, be environmentally friendly, and offer a new taste never seen before.” I did.
Aiming to create a ramen with a full-bodied, rich flavor that rivals tonkotsu ramen, and a refreshing aftertaste that tonkotsu ramen lacks, we repeatedly made prototypes to create the ideal flavor.
■*Characteristics of the ingredients used*
Ultra-thin bonito flakes and high-quality bonito flakes without additives 〇Special manufacturing method Beef bone soup
Using a special manufacturing method, the flavor is extracted in about half the heating time compared to pork bones, and there is almost no waste, making it an environmentally friendly manufacturing method. Aiming for one of the Sustainable Development Goals (SDGs), “more and better with less”, we aim to improve the quality of cattle while using resources efficiently and reducing environmental degradation and pollution. It’s bone broth.
〇Kansai Odashi
Kansai-style dashi is made using carefully selected dried bonito flakes purchased from a long-established bonito flakes shop in Osaka that has been in business for over 70 years. A unique blend of additive-free, high-quality, ultra-thin bonito flakes from Makurazaki, Kagoshima Prefecture, mackerel and urume sardine flakes from Ushibuka, Kumamoto Prefecture, and Souda Bushi from Tosashimizu, Kochi Prefecture. We carefully select ingredients with low fat content, which suppresses the fishy odor and allows you to enjoy the flavor and sweetness straight away.
Special noodles and Miyazaki herb beef
〇Noodles
We use two types of noodles, ultra-thin noodles and flat noodles, in consideration of their compatibility with the soup. By blending carefully selected flavorful domestic wheat with natural brine and salt, you can enjoy the strained noodles and the aroma of wheat. These are specially made noodles with a particular focus on the amount of water added and rolling process to ensure that the noodles don’t overpower the flavorful beef bone soup.
〇Miyazaki herb beef
Miyazaki Herb Beef is a cow raised on carefully selected herbs (oregano, cinnamon, ginger, garlic), etc., and is rich in vitamin E, has an antioxidant effect, maintains freshness easily, and has a high proportion of saturated fatty acids, especially oleic acid. It is characterized by This beef has a low fat melting point and melts in your mouth when you eat it.
