What is sotol, a distilled spirit that takes 12 to 15 years to produce? The raw material for sotol is a plant called dasylirion.
It is similar to agave, which is the raw material for tequila, but strictly speaking it is not an agave but a plant in the asparagaceae family. It grows even in harsh environments like the one in the photo. Approximately 12-15 years until ripe and harvested. Sotol is made from 100% Dasylirion sugar, which has endured the severe temperature differences between day and night in the desert climate and numerous droughts, and is truly a gift of nature.
On the other hand, it also has a diverse history, such as being secretly exported from Mexico during the American Prohibition era and gaining popularity, and production being virtually banned from 1920 and producers being persecuted. .
The taste is characterized by a concentrated flavor with hints of grass and straw, and a subtle smokiness.
traditional production method
Each piece of Dasilirion is carefully harvested by hand and loaded onto trucks and transported to the distillery.
The method of making sotol depends on the distillery, but the Santo Cubiso factory uses a traditional handmade method.
Once harvested, the Dasilirion are manually placed one by one into a stone oven made by digging a hole in the ground, along with firewood, and are steam-roasted.
Under the stinging sun, and with the added heat of the oven, I remove the approximately 20 kilograms of dasilillion from the oven. The steamed Dasirilion is cut into small pieces by hand using an axe, etc., and then further crushed using a shredder.
After that, the crushed Dasilirion is placed in oak barrels and fermented using only natural yeast, then distilled twice in a copper still, and then bottled before being delivered to us.
Fermented slowly using the power of nature without adding yeast. Fermentation time is greatly affected by the season and weather, so the experience of a skilled craftsman is essential to making delicious sotol.
In Mexico, only the spirits made using dasylirion in the states of Chihuahua, Coahuila, and Durango are called sotol.
