Japan’s first glamping resort “Hoshinoya Fuji” will start offering the “Gibier Dinner” fall menu on September 16, 2024. Since opening in 2015, Hoshinoya Fuji has been serving game dishes using venison, wild boar, and other meats. When we first opened, we learned about the damage to the local agriculture and forestry industry, so we started offering wild game to encourage capture and consumption. Furthermore, in order to convey our commitment to gibier and to serve it deliciously, our chefs and staff have personally visited hunting sites to learn about the thoughts of hunters and how to make the most of it. Based on that knowledge, as I learned a variety of cooking methods, I came up with a menu that wanted to deliver gourmet food that took advantage of the deliciousness and delicate meat quality of wild game caught using top-notch techniques, and the flavors that change with the seasons.
In particular, at the Gibier Dinner, you can enjoy appetizers that are prepared fresh on the table with the Glamping Master, as well as dishes that are smoked. We offer a special dinner time at HOSHINOYA Fuji, where you can enjoy the chef’s carefully selected dishes with wine unique to Yamanashi.

Venison salsiccia is combined with raspberries and grain mustard, then instantly smoked. Enjoy with chestnuts and persimmons. This is a dish that creates an autumn forest atmosphere by trapping smoked smoke that resembles fog in a glass container.
Deer tartar and marinated mushrooms with gin jelly
Deer tartare is paired with a gin jelly with the characteristic sweet and spicy aroma of jeniper berries. The tartare is coarsely ground to enjoy the texture, and is served with three kinds of marinated mushrooms and walnut cream.
Roasted venison with chestnut puree
Autumn venison is rich in acorns and other nuts, and is characterized by its fat content, which increases its flavor. To bring out the flavor, simply grilled venison is served with blueberry sauce, dukkah (*1), and chestnut paste.
