Honda Miso Honten was founded when the first generation of former Tanba toji, who was recognized for his skill in making koji, presented white miso with a fine texture to the imperial court for use in cooking.

“Senmaizuke”, which is made by thinly shaving Shogoin turnips, pickling them in salt in a fan shape, and seasoning them with kelp, sugar, and vinegar, was created by Fujisaburo Daikokuya, who worked as a cook at the imperial court in Kyoto. This is a shop that created Senmaizuke and has continued to preserve its taste.
We have kept the barrels for many years and continue to make pickles in our tenement house on Fuyamachi-dori.
