Movies related to Higashihiroshima Miura Senzaburo (*1 note), who started a sake brewery in Akitsu, Hiroshima during the Meiji period, faced repeated hardships, and was able to learn from Toshiichi Satake (*2 note), who developed an automatic rice polishing machine, and Hashizume Yo (who worked hard to train Hiroshima chief brewers). (*4) The brewing method that characterizes Hiroshima’s sake is the “soft water brewing method” created by Senzaburo Miura. Senzaburo learned that the taste of sake differs depending on the water quality, and developed a unique method that was suited to Hiroshima’s soft water.

Higashihiroshima Junior Chamber, and various businesses and
organizations in the city. We are working on the “Sake Festival” with support from all walks of life. Approximately 400 company and student volunteers volunteered each day, and approximately 800 volunteers supported the event over the two days.
