Press release: October 18, 2024 Ryokan Onomichi Nishiyama Winemakers Dinner Winery dinner in ONOMICHI ~ Journey to the Setouchi terroir “Ryokan Onomichi Nishiyama”, an auberge-style inn located in Onomichi City, Hiroshima Prefecture (operated by Setouchi Ryokan Co., Ltd.), hosts “Yamanokyo Ota Winery” (Fukuyama City, Hiroshima Prefecture) and “Omishima Minna no Winery” (Imabari City, Ehime Prefecture). We will be holding the winemaker’s dinner “Winery Dinner in ONOMICHI” for one day only on Saturday, November 16, 2024, inviting two companies. Ryokan Onomichi Nishiyama’s concept is “an inn that conveys the true Onomichi culture to the present day,” and the restaurant also serves dishes that let you feel Onomichi through its ingredients, tableware, and its culture and history. In addition to the marriage of wine and food carefully brewed by Yamanokyo Ota Winery in Fukuyama City, near Onomichi, and Omishima Minna no Winery in Omishima, Imabari City, Ehime Prefecture, we also offer wines that can only be enjoyed here by producers and sommeliers. Since 2015, he has been trying his hand at winemaking while fighting with natural friends such as monkeys and wild boars Start. Currently, we are a winery that grows nine types of grapes in our approximately 2 hectares of vineyards and delivers each vine by hand, from grape cultivation to bottling and labeling.

In 2015, they leased a mandarin orange field that had been abandoned due to the declining birthrate and aging population, and began cultivating grapes for brewing in 2015. With a strong passion to revitalize and reborn the island, we completed the brewery in 2019 and started the business from scratch. This is a winery that expresses the charm of the island through winemaking.

His career as a chef started at “Benoit Tokyo”. He learned and honed the classics of French cuisine at restaurants such as “Beige Alain Ducasse Tokyo” and “L’Atelier de Joel Robuchon Etoile.” Since 2017, he has been working as an executive chef at Dominique Boucher Tokyo. Not only did he quickly earn two Michelin stars as a chef at the restaurant, he also worked under the tutelage of Dominique Boucher and worked hard to organize food events for children with disabilities. In addition, in 2020, he has been working hard to prepare for the opening of “MUNI ALAIN DUCASSE” as the sous chef in order to master the French cuisine he desires. Appreciated for his experience and skills, he will serve as the executive chef of Benoit Kyoto from October 2021 to April 2023, where he will utilize the essence of gastronomy to bring out the appeal of bistro cuisine.
