“Dom Pérignon Vintage 2006 Plénitude 2″ is a new masterpiece created by adding an additional eight years of aging to the 2006 vintage. Vintage Dom Perignon undergoes a long aging journey, with only a limited number of bottles kept in the cellar. By aging slowly over time, the activity in the bottle increases and the yeast gives energy to the wine. After approximately 15 years, Dom Pérignon has reached its peak of aging energy and reached new heights. Dom Pérignon has undergone further evolution, gaining more depth and amplifying its power with a longer finish. This is the birth of Dom Pérignon’s second maturation stage, Plénitude 2. Dom Pérignon Vintage 2006 Plénitude 2 shows how important the passage of time is to Dom Pérignon. 2006, when the sun and rain alternated 2006 was the final vintage of a special few years, with five consecutive vintages being released. Four of the last five vintages have been characterized by intense heat and extremely ripe grape harvests. This has produced a variety of vintages that give a sense of warmth and limitless expanse, such as the dark and profound 2003 and 2005, and the bright and full-bodied 2002 and 2006. The 2006 wine has both brightness and richness, and while inheriting the characteristics of previous vintages, it also has its own unique personality. The 2006 vintage, which holds an important place in Dom Pérignon’s history, has undergone a long period of aging and has entered the second stage of maturation, known as Plénitude 2, reaching the peak of depth and complexity. Vintage 2006 as the second “Plénitude” moves toward refinement In order to ensure proper ripening of the grapes despite the late heat that coincided with the harvest season, we had no choice but to set an unusually long harvest period. From the beginning, the 2006 wines had a sensual, round character and were characterized by an enveloping flavor, but their open, rich textures called for more elasticity. As a result, it took longer than usual to reach the first “plenitude”, the first stage of ripening, and signs of this finally began to appear in 2015. This process unfolded as if the aging of the grapes and the wine were slowly resonating with each other. After an additional seven years of aging, Vintage 2006 brings to fruition the new charm of Plenitude 2, which has reached its second stage of aging. The aging process brings new possibilities to make the most of nature’s bounty. Vintage 2006 is characterized by its potential to become more refined and clearer over time, reaching new heights. The resulting Dom Pérignon Vintage 2006 Plénitude 2 emits a warm luster, envelops us with its rich, deep flavor and curvaceous nuances, and leaves behind a beautiful lingering impression of delicate Champagne. Climate and harvest in 2006 The weather in 2006 was contrasting, but mostly warm and dry. After the intense heat of July, August was unusually cool and rainy. What determined the vintage was the sunny, summer-like weather in September. This weather dried out the sources of the Botrytis bacteria and increased the ripeness of the grapes to well above average levels. Harvesting began on September 11th and lasted nearly three weeks. Fragrance A luscious bouquet that instantly captivates, creating a warm and varied impression. A floral impression with a hint of minerality opens up and expands into aromas of peach, citron, calison, and mocha. Taste When you put it in your mouth, a rich aroma spreads out, and you can feel a modest softness at the center. As complexity increases, the mouthfeel tightens and becomes
increasingly salty. The finish is a pleasant blend of bitterness and great ripeness, with dried fruit, cocoa and aromatic roasted hazelnuts. Dom Pierre Pérignon and his history The heritage of Dom Pérignon’s sacred Abbey of Hautvillers is not just the art of winemaking, but its spirit. Dom Pierre Pérignon was appointed cellar master at the Abbey of Hautvillers in 1668. For the next 47 years, he dedicated his life to creating “the world’s best wines.” For Dom Pérignon, the pursuit of perfect harmony is an essential creative vision and an eternal journey. We must always strive for perfection in order to express Dom Pérignon’s ideals and unique personality. This is a never-ending quest, and a mystical inspiration that allows Dom Pérignon to find new value in its vintages. Official website:
