Among the Hachiya-type persimmon seedlings that were distributed in the Kokugi area in 1928 to commemorate the enthronement of Emperor Showa, two mutant trees were discovered that were productive, well-colored, and had large fruits. Later, this variety was bred and named “Fujigaki” in 1955 because the fruit was large and shaped like Mt. Fuji. Fuji persimmons are astringent persimmons and cannot be eaten as they are. It is shipped after removing astringency within the area where it is grown. The CTSD method (carbon dioxide gas alcohol removal method), which had been popular throughout the country, was unable to remove the astringency, so producers developed a subcommittee’s own method of removing
astringency through trial and error, using only alcohol. This is a short-term alcohol removal method that can shorten the period of time required to 5 days.
