As a local bread maker, it has continued to operate as a part of the community, providing bread in schools and supermarkets. Every Sukumo resident has tried Hishida Bakery’s bread. Since the day they poured in the seawater, they haven’t taken a single day off, waking up with the sunrise to observe the salt’s condition and adjusting it as needed until the sun sets. To a salt brewer, salt is a living thing. They care for each salt for at least two months.
