A toast ceremony will be held for locals and tourists, with each person receiving a free glass of Nikaso. In addition, special stage performances by various artists are planned, including singer-songwriter Yuasa Michiru, who is based in Beppu City, Oita Prefecture. ■NIKASTA NIGHT Overview

The nighttime Beppu will be lit up with the sounds of a diverse range of artists and DJs. We will also be offering a special flavor of Nikaso, available only on the day. Enjoy a special night with a Nikaso in hand. Founded in 1866 as a sake brewery in Hinode Town, Nikaido Shuzo has remained family-owned and operated ever since. In 1949, Nikaido Shuzo began shifting its focus from sake brewing to shochu distillation. The skills and knowledge of koji, essential for sake brewing, passed down through generations, were applied to shochu production. Shochu has been made using rice koji since the 16th century. However, in the early 1970s, Akira Nikaido, the
sixth-generation head of the family, began developing a new production method with the aim of creating a shochu with a cleaner, more widely accepted flavor. So, they took on the challenge and succeeded in producing shochu using 100% barley koji. In 1974, Japan’s first 100% barley shochu was released and enthusiastically received by consumers. Shochu, which had previously been considered a regional drink, spread throughout Japan and eventually established itself as a national drink. It also boosted Oita Prefecture’s recognition nationwide as the home of barley shochu.
