Tetsuya Asano Profile
After training at a number of famous restaurants in the Netherlands and France, he worked at the Ritz Paris. In 2017, he became the first Japanese person to become the head sous chef for the main dining at the Ritz Paris. Along with the executive chef, he supervised all of the hotel’s restaurants, including Espadon, which received two stars in the Michelin Guide. In December 2019, he became the head chef of “Toki TOKI” at “HOTEL THE MITSUI KYOTO”. Selected to represent Japan in 2027 at the Bocuse d’Or International Culinary Competition held in November 2023.
