The first whiskey distillery in Hakodate, Hokkaido, “D Tripper” is born, and the whiskey bottler company “Behind the Cask” takes over the site where the winery was relocated.

・BEHIND THE CASK, which develops original imported whiskey products in Hakodate City, Hokkaido, has taken over the former brewery of a Japanese wine manufacturing company known as a pioneer of natural wine in southern Hokkaido, and is located in Motomachi, Hakodate City, one of Japan’s leading tourist destinations. Di Tripper Distillery, which produces grain whiskey made from domestically produced malt, will be launched as a new business. (November 2023: Obtained the first whiskey manufacturing license in Hakodate)

・Di Tripper Distillery (English name: Di Tripper Distillery) is a place name written in English in the expedition record of Admiral M. Perry when he visited Hakodate (now Hakodate) on a black ship in 1854. It was named after the “Di” in Hakodate, expressing the desire to connect visitors to Hakodate, travelers, the connection between the West and the East, and the past, present, and future.
The main raw material is malt processed from two-row barley produced in Hokkaido.

agricultural product rather than an industrial product. *Two vintages are written on the label: the year of barley harvest (HARVEST) and the year of distillation (DISTILLED). Drough from the malt is transported to a nearby poultry farm, where it is reused as feed and circulated within the region.

We will also grow the unblended whiskey.In order to raise the long-term aged unblended whiskey, we will need support through crowdfunding, including the operating costs until sales.With everyone’s cooperation, we will be able to create Hakodate whisky.”
The owner’s cask (barrel purchase right) is also available as a return product in the crowdfunding campaign that is open to the public. As a cask owner, you will purchase D Tripper’s whiskey, and after aging, it will be bottled and sent to you.
