■DLG contest, a gateway to success in meat processing

■Manufacturing at Edelweiss Farm ~ “Our mission is to deliver delicious ham and bacon”
Many hams and bacons on the market undergo “injection” and are salted for 2 to 7 days before being smoked in a mechanical smoker that smokes the chips using an electric or gas heat source. . It is common knowledge in the ham industry to make products weighing 15 to 18 kg from 10 kg of raw materials.
On the other hand, Edelweiss Farm’s products are aged for four weeks at ice temperature and are made using the classic manufacturing method using wood and charcoal, which requires a lot of time and effort to produce a product that weighs only 6 kg from 10 kg of raw materials. is still being done.
