Galette des Rois is a traditional French sweet that has been popular for many years as an indispensable snack for New Year’s celebrations. Inside the galette des rois is a bean doll called a fève, and the person who finds the fève inside the cut pie will wear a crown, be blessed as a king, and have good luck throughout the year. It is said. At our hotel, we have modified the ingredients and used Soireboul (a butter-like soy milk product) for the almond cream, which has a lighter texture and is easier to eat than using regular butter, and is made with environmentally friendly organic vanilla. As an accent, semi-dried figs marinated in kirsch overnight are used. We made it so that you can feel the crunchy texture and refreshing flavor of kirsch. The base of the pie is spread with nougat made with plenty of roasted walnuts, allowing you to enjoy both the bitterness of caramel and the aroma of roasted walnuts. Instead of fève, almonds are hidden inside, so you can enjoy the excitement of not knowing who will win, so it is recommended for family celebrations or as a gift.
This menu also won the grand prize at the 33rd Prince Hotel Cooking Contest Confectionery Division, a competition in which chefs from Prince Hotels & Resorts across the country compete to show their skills.The menu was presented by our hotel’s young female pastry chef, Hayashi Saki.
