Kamakura Hangetsu was released in 1998. When I was looking to create a new type of rice cracker that would be loved in today’s world, I met a skilled craftsman who was good at making old-fashioned carbonated rice crackers. So, we asked if it would be possible to bake a new type of rice cracker that would take advantage of the lightness of carbonated rice crackers, but would also be crunchier and more fragrant. As a result of trial and error, we succeeded in baking in a special thick baking mold that was not available in the past. We created the unique fragrant texture of half moon.
