-Autumn-
”. Afternoon tea depicts the autumn scenery of rice terraces, which is a symbol of HOSHINOYA Karuizawa’s landscape. You can enjoy an elegant moment with a limited-edition rosé cider and the traditional craft of drinking “Sakura Kabacha” while admiring the autumn leaves while listening to the sound of water. *

*Background*
HOSHINOYA Karuizawa is surrounded by the rich forest at the foot of Mt. Asama, and is a facility based on the concept of “staying in a village in the valley.” He also envisioned an imaginary “another Japan,” such as “what if Japan had modernized while valuing its uniqueness even more,” and “what if Japanese culture had matured to the present day.”
The landscape of the rice terraces within the village was also designed with the theme of “another Japan” and is expressed as an original landscape that resonates with the Japanese people. The Rice Terrace Lounge was created this summer as a base for rest overlooking the rice terraces.
When you sit down in the lounge seat, you can enjoy the changing seasons. Especially in autumn, a wide variety of trees, including maples, cherry blossoms, and konara oaks, change color and the fallen leaves spread out like a carpet. We wanted to provide a dining experience where you can enjoy seasonal blessings such as grapes and deer while admiring the autumn leaves spreading before your eyes, so we developed an afternoon tea only available in autumn.
“Rada Terrace Lounge” will open in summer 2024 with 28 seats in total. Autumn/”Rice Terrace Lounge”
*Feature 1: Afternoon tea that embraces the essence of Japan and incorporates the blessings of autumn*
Autumn in Shinshu is when many ingredients are in season, including grapes (*) and venison, which are among the top producers in Japan. We offer an afternoon tea unique to this area that combines the blessings of Shinshu’s mountains and food culture.

A tart made with dried apricots, a specialty of Shinshu, mixed with butter cream, gateau chocolate with the aroma of buckwheat flour, and vegetables that use autumn flavors such as sweet potato, burdock, and lotus root to create a carpet of fallen leaves covering the rice terraces. You can enjoy small sweets such as chips that give you a sense of the changing seasons and the food culture of Shinshu. In addition, we will prepare meals that make use of ingredients unique to this region, such as carp raised in clear streams and wild game, a bounty from the rich mountains. You can enjoy afternoon tea unique to HOSHINOYA Karuizawa, such as sandwiches with carp cutlet that can be enjoyed because the carp has no odor, and pate that takes advantage of the richness of venison liver.

*Feature 2: A special drink that adds color to your extraordinary life with limited edition rosé cider and cherry birch tea*
As one of the drinks to enjoy with sweets and meals, we will be offering an original rosé cider called “Premium Cider”, which was brewed for a limited time in collaboration with Ringo Gakko Brewery, a cider specialty brewery in Shinshu, for this afternoon tea.
We will prepare “POMME ROSE” and “Sakura Birch Tea”, which is a traditional drinking craft made from wild cherry tree bark. “Premium Cider POMME
ROSE is a sweet and sour rosé cider made by blending three rare red-fleshed apples, Enmai from Shinshu and IHR17, and Maypole from England, and finished with secondary fermentation in the bottle. The taste, which is characterized by its refreshing acidity, harmonizes with the variety of Japanese and Western rice terrace afternoon tea. In addition, “Sakura Birch Tea” is a blended tea made from the bark of Oyama cherry blossoms, which is the material used to make Oju’s birch crafts. This tea has a gentle texture and a refreshing flavor that brings out the sense of unity with rice terraces and afternoon tea.

*Introduction of Hokushin Gogaku Cider Lee Co., Ltd. “Ringo School Brewery”*
Established in 2019, Ringo Gakko Brewery is one of the few breweries in Japan that specializes in apple cider, making use of an abandoned school located in Iizuna Town, an apple town in northern Nagano Prefecture. This cider is made by combining the flavors of various apples that can only be made in Iizuna Town, Shinshu, which grows more than 50 varieties of apples, and by using the traditional European pressing method that takes time to extract the juice and flavor of the apples. We are practicing making.

* Feature 3 A unique three-tiered afternoon tea that reflects the four seasons of the rice terraces *
The terraced rice field afternoon tea is served in a special three-tiered rice bowl with a motif of terraced rice fields drawn from a clear stream from Mt. Asama, with a different impression from the exterior and interior. The outside is made of “Kabazaiku” made from the bark of wild cherry trees, creating an appearance reminiscent of trees lining rice terraces. Kaba Zaiku is a unique and beautiful material that uses natural bark, each piece of which has a different color and knot shape. In addition, you can feel the texture, the deep color, and the texture of a living tree growing. Additionally, the interior of the three-tiered structure is decorated with “bent woodwork” to express the curves of the rice terraces in front of you. The three-tiered heavyweight is a three-tiered heavyweight that is deeply integrated with the landscape of the terraced rice fields, utilizing the craftsmanship of both the inside and outside of the heavyweight.
