In addition to reducing food loss, the second demonstration test will be conducted from April 1 (Wed) to May 6 (Wed), which has been well received by employees. As a characteristic of Ekinaka stores, there was a problem that food loss often occurred due to securing the product lineup until closing and large fluctuations in the number of prospective customers due to the weather. The company aims to reduce food loss in Echinaka as a whole by purchasing food that could not be sold by co-cooking and deploying re-cue cooking, an actual co-cooking store service for employees working at stations.
In the first demonstration experiment, approximately 1 ton of food rescue was performed in one month, centering on the commercial facility “Gransta” in the ticket gate of Tokyo Station, and a reduction in food loss from Gransta of approximately 10% was achieved. In the second phase, we will increase the number of participating stores and build the “Ekinaka Food Ecosystem” to further reduce food loss.
