Lab 89 1st has no menu such as à la carte, and the owner chef Shuntaro Morishiri will only offer one course that only one product that boasts according to the season is reserved for customers who book.
We plan a two-course system from 18: 00 ~ and 21: 00 ~, with a seasonal full course of 6500 yen (excluding tax) and a course including pairing of 9,000 yen (excluding tax), all seat reservation only It becomes.
The course is developed / changed in the spring, summer, autumn and winter, using only the most delicious ingredients at that time according to the four seasons.
In addition, the ingredients are carefully selected by chefs visiting producers nationwide and sent directly to the production area, so even during the same season, the ingredients and dishes used will always change depending on the state of purchase and development.
Taking into account the weather and conditions at that time, we will deliver the best dishes while talking directly with the producers. It is a laboratory where producers and chefs can always enjoy the process of change and growth through trial and error.
