The finals of the national competition of “Kai Brand” (sponsored by Sankei Shimbun, special sponsor Kai Brand Co., Ltd.) were held on Monday, September 16th (holiday) at the Japanese Confectionery College in Setagaya Ward, Tokyo, and Iizuka High School (Fukuoka).
“Arc-en-ciel” won the prize (Minister of Education, Culture, Sports, Science and Technology Award).

This time’s theme is “Anniversary Cake”. There was no specification of ingredients, but original recipes that people would like to give to celebrate anniversaries or special occasions were solicited. A total of six schools made it to the final stage after passing through the east and west blocks of the national competition preliminaries.
The cake I made “chouette”
“Arc-en-ciel”, which has won the honor of being the best high school pastry chef in Japan, created “Chouette”, a Mother’s Day themed cake. We used strawberries and oranges to express the warmth of love passed down from our mothers, and we made bouquets of sunflowers, gerberas, and tulips, which are the three mothers’ favorites, out of sweets and decorated the cake.
Second place went to “reve” from Jonan National College of Technology (Gifu), and third place went to “RPG” from Culinary Training College (Hyogo). The corporate awards include “reve” for the Kaijirushi Award (Kaijirushi Co., Ltd.), “fortuna” from Noda Kamata Gakuen National College of Technology (Chiba) for the Pekochan Award (Fujiya Co., Ltd.), and the Tully’s Award (Tully’s Coffee Japan Co., Ltd.). Nikoyo High School (Nagasaki)’s “sourire” and “RPG” were selected for the Pastorese Award (Dover Western Liquor
Foundation).
High school students making cakes
The winning team will receive a “Tahiti study trip” from Air Tahiti Nui. The Kai Brand Award team will be presenting the restaurant “KITCHEN”, which is operated by the company on the first basement floor of the main building of Isetan Shinjuku Main Store.
Students will be given the right to jointly develop original recipes, which will allow them to provide recipes devised by students at STAGE.
The Peko-chan Award and Tully’s Award teams will be awarded the right to develop collaborative products with each company, and the products will be released nationwide. The Pastriese Award team will be selected from the 31st Luxardo Confectionery Competition.

In addition to an invitation to the presentation of the winning work of “Premio,” all students in the department will receive a set of 500ml of alcohol disinfectant spray “Dover Pastriese 77” and an empty portable bottle.
The judges for the final competition were Chef Toshihiko Yoroizuka and Chef Noriyuki Nagai, and tournament advisor Yukiko Omori also supervised the judging. An archive of the tournament is available on Sweets Koshien’s official YouTube channel.
