Japanese Soba Noodles Tsuta, operated by Tsuta no Oto Co., Ltd. (Headquarters: Setagaya-ku, Tokyo, Representative: Yuka Asakura), will start a new business format in February 2024 that is completely membership-based and only available in the evenings. From January 9, 2024 (Tuesday), we will pre-sell a limited number of membership rights and limited products through the company’s first crowdfunding.

“Yatsuta” is different from regular business hours during the day, and uses a full membership system.
You can enjoy a special menu exclusively for members, which is different from what is offered at lunchtime.
During lunch time, it is difficult to enter the restaurant without making a reservation in advance, so we hope you will enjoy a luxurious time away from your daily routine at Yotsuta. This is the origin of “Yatsuta”.
The menu will include 12 seasonal ramen types, which will change monthly and will be unveiled for the first time each year, from the “100 recipes” left behind by Tsuta’s founder Yuki Onishi.
We also offer a variety of alcoholic and non-alcoholic menus, including Hibiki, the highest quality blended whisky.

The “100 Recipes” menu can only be ordered by “Yatsuta” members. As the name suggests, you can enjoy 100 kinds of so-called secret recipes that change every month.
Based on these, we also offer menus that are arranged according to the season and preparation level.
In February, we will be offering “Foie Gras Miso Tsuke Soba” as the first product from “100 Recipes”.
This is one of the Miso no Jin series that was only made in limited quantities. Foie gras rossini in a rich miso dipping sauce made from red wine, chicken, beef, etc.

In January 2012, Yuki Onishi opened “Japanese Soba Noodles Tsuta” in Sugamo, Tokyo with the desire to spread Japan’s UMAMI dashi culture to the world.
In pursuit of ramen that can only be tasted here, in 2014 we started offering soy sauce ramen using black truffles, which quickly gained popularity and received high praise from overseas customers. After receiving the Michelin star, the number of overseas customers visiting the restaurant has increased dramatically, and the restaurant has grown into a restaurant that has achieved its original goal of spreading Japanese dashi culture. In December 2019, we moved to Yoyogi Uehara, where we are today.

Japanese Soba Noodles Tsuta, including “Yatsuta”, uses only carefully selected ingredients that are completely additive-free and chemical seasoning-free.
For many years, we have been developing ramen that is gentle on the body and that people don’t hesitate to eat, and we also consider sustainability when procuring raw materials.
We maximize the original taste of the ingredients, such as French wheat, branded chicken (whole chicken from Aomori Shamorock/whole chicken from Amakusa Daio), and Kagoshima Prefecture Honkarebushi, which is shaved every day in the store using a custom-made scraper. You can enjoy it.
