* Mr. Shunya Ikebata L’Atelier de NOTO*
Mr. Shunya Ikebata, the chef of “L’Atelier de Noto,” is breaking new ground with French cuisine by making use of Wajima’s rich nature. His cuisine has been highly praised, earning him a star in the Michelin Guide, but behind his cooking is a deep love for the ingredients of his hometown, the Noto Peninsula, and a commitment to sustainable food culture.

Despite suffering great damage himself in the Noto Peninsula Earthquake, Chef Ikebata took action with deep consideration for the local community. Despite losing his restaurant and home, he gathered his friends and started a soup kitchen the day after the earthquake. He and his friends ran a food and beverage business in Wajima under the name Wajima Central Kitchen, led by Chef Ikebata. We are cooking up to 2,000 meals a day at the evacuation center.

“Noto Marche”, which will be held at the same time as this charity match, was realized out of the desire to share with the people of Tokyo the bounty of Noto’s rich food as well as their love for the restoration of Noto.

The dishes he creates are beautiful and heartwarming, making use of the blessings of Noto’s nature. Each plate embodies love for the region and a strong will to overcome adversity.
Please enjoy the heartfelt hospitality of Chef Ikebata and the members of Wajima Central Kitchen in Yoyogi, Tokyo.
