In 2010, a 200-year-old champagne from the 1820s to early 1830s was found off the coast of Finland, and it became a hot topic because it was delicious and had not deteriorated.
change in taste
It is said that aging in the sea makes the taste* mellower and increases the umami.
In a certain research presentation, it was said that *the flavor and sweetness increased, and the alcoholic taste decreased* compared to before aging.
When analyzed in detail, it was announced that while the amount of glucose, which is the source of sweetness, increased, the value of organic acids decreased, which was in line with the sensory

why do it
We want to solve problems in the oyster industry by expanding the possibilities of oysters.
In many regions, oysters are grown by hanging them on rafts made of wood. We believe that we can expand the possibilities of oysters by effectively utilizing the rafts that exist only for cultivating oysters as rafts that create the “magic of the sea.”

Oyster consumption is decreasing year by year, and farmed oyster production in 2021 will be approximately 159,000 tons (including shells), 30% of 20 years ago in 2001 (approximately 231,000 tons). It is said that this number is decreasing.
Additionally, in recent years, oyster production has been decreasing significantly due to temperature changes and feeding damage (being eaten by other creatures).
As a result, the business conditions of oyster fishermen have become difficult. By keeping the underwater bottles, you will become the savior of the oyster industry.

About the place to keep the underwater bottle
Under the Undersea Bottle Keeping System, we will keep your bottles under the sea at a depth of approximately 10m in the ocean near Naruto City, Tokushima Prefecture.
The alcohol is suspended on oyster rafts, allowing it to age on the seabed as the oysters grow.

The person in charge of keeping the underwater bottles is Koichi Etsu, who farms Tokushima Prefecture’s leading brand of oysters, “Uzushio Champion.”
The alcohol, which is aged in underwater bottles under the rafts where Whirlpool Champion grows, is sure to be a perfect match for oysters. Details page
