Our company (hereinafter referred to as our company) aims to solve social issues using traditional Japanese fermentation technology. Using fermentation technology, we will realize a future in which the 2.5 billion tons of food that is thrown away each year around the world is eliminated.

The recognition that food loss is an issue that we must proactively address is becoming commonplace through corporate initiatives for the SDGs and school education. However, according to the Ministry of Agriculture, Forestry and Fisheries (*), the current food waste in Japan is approximately 5.23 million tons annually. When converted to the amount of food wasted per person, it is equivalent to throwing away the equivalent of one rice ball every day.

Reducing food loss is thought to have a major impact on solving various social issues, such as the environmental burden caused by incineration and solving the world hunger problem, and it is important for society to establish specific methods as technologies. This is very important for problem solving.
The reason we founded our company was to think, “What can I do to make sure that Japan’s rice is not left over?” There is a surplus of new rice produced in Japan every year, and after a certain period of time it is called “old rice” and its selling price drops, which has a big impact on the income and expenditure of people involved in the rice industry.

On the other hand, in the past, rice was stored little by little for the following year. The old ones were made into koji and turned into fermented foods such as miso, vinegar, and mirin, which were then displayed on the table. We believe that if we apply this technology to modern times, we can upcycle all kinds of food waste into new, valuable products and eliminate food waste.

It is characterized by the gentle sweetness extracted from the rice through fermentation, so you can enjoy the “sweet happiness” without feeling guilty. It is also possible to manufacture products by upcycling old rice and substandard rice, and we are also collaborating with companies to create sustainable sweeteners.
Our products are used in a wide variety of applications, including our own brand “Food Cosmetics ORYZAE,” as well as nursery school lunches and confectionery manufacturing.

Our company utilizes fermentation technology to plan, manufacture, and sell food and other products. In partnership with companies, we are also working on “fermentation upcycling” of non-standard products and manufacturing residue using our resources.

We jointly developed “Saka no Nakano Dry Rice Koji,” an upcycled rice koji to avoid producing surplus rice. This initiative aims to solve the problem of “surplus rice” in Japanese agriculture and stimulate demand for rice.

When Zojirushi Mahobin developed a rice cooker, it produced “Olyze sweetener (fermented rice malt sugar)” by upcycling the rice cooked in the rice cooking test. The sweetener manufactured is “ORYZAE We plan to commercialize it as “GRANOLA” and donate a portion of the sales to agricultural promotion organizations.

Rather than “avoiding waste,” we create new value such as deliciousness and health through fermentation and upcycling, creating a prosperous society.
