“Ina to Agave Co., Ltd.” (Oga City, Akita Prefecture,
Representative: Shuhei Okazumi; hereinafter referred to as “Ina to Agave”), which is engaged in town development centered on a craft salmon brewery in Oga, Akita Prefecture, is holding an event in line with the cherry blossom viewing season. The event “Craft Sake and Ikebukuro” will be held from April 5, 2024 (Friday) to May 12, 2024 (Sunday), featuring craft salmon and pairing food at Ikebukuro’s famous Japanese sake bars. In conjunction with this event, the new craft salmon brand “Koshu Hanakaze”, which started selling on Thursday, February 22, 2024 and sold out in 5 days, will be released on Friday, April 5, 2024. It will be resold sequentially at Ina to Agave affiliated liquor stores.

As we talked with the people at Sunshine City, who are responsible for Ikebukuro’s urban development, about doing something, we came up with the very selfish slogan of “making Ikebukuro a sacred place for craft salmon,” and decided to take the first step toward that goal. This time’s “Craft Salmon and Ikebukuro” was completed as a project. We would like to carry out various initiatives in the future, not just this event, in order to make this a sacred place. Thankfully, Hanakaze is a new standard product made from rice and agave that is becoming difficult to obtain, but if you go to Ikebukuro during this period, you can definitely try it! We hope you will take this opportunity to enjoy it. Hanakaze also has the meaning of the wind that blows when cherry blossoms bloom. We planned this event to coincide with the Sakura Festival being held at Sunshine City’s Observation Park during this period. We hope you enjoy the Sakura Festival as well.

“Hana” comes from the Japanese name for hops, Western arabesque. Doburoku made with Chinese arabesque is called “Hanamoto”, which comes from the fact that it is a manufacturing method that has been passed down from ancient times in the rural areas of Akita. “Wind” comes from the strong winds of Oga, which is the concept of the craft series. Our strong desire to breathe new life into this industry through “Koshu Hanakaze” and reach as many people as possible is strongly encapsulated. This series is named “Kosake”. This means that Japanese culture will develop through the interaction of sake and other cultures.
Taking this product as an opportunity, I would like to call craft salmon koshu, in contrast to Japanese sake (sake) and doburoku (dark sake).

By using hops as an ingredient, we have achieved a flavor similar to lychee or muscat. Craft salmon with a rich aroma and a very pleasant drink. We asked calligrapher Itsuki Tsujii to write the label text for the calligraphy Hanakaze.

Ina to Agave is a craft salmon brewery founded in the fall of 2021 in Oga City, Akita Prefecture. “Craft Sake” is a new genre of alcohol that aims to create new flavors by adding auxiliary ingredients to it, based on Japanese sake manufacturing technology. Rice and Agave considers alcohol to be regional media. In the two years since our founding, we have opened a restaurant, a food processing plant, and a ramen shop in order to attract people to the Oga area through alcohol and have them come and enjoy the experience. Over the next year, the company plans to open a hotel, distillery and snack bar. Starting with craft salmon, we aim to preserve the city of Oga for future
generations.
