Atsutsuji Co., Ltd. It will be offered from the 1st until the end of October. The current situation with kelp is that the kelp industry is shrinking or going out of business due to a decrease in production, people turning away from cooking, and people turning away from eating tsukudani (rice boiled in tsukudani). Meanwhile, the konbu ramen, which opened in May of last year to promote the appeal of kelp and which is served while learning about kelp, is always sold out. Starting in May 2024, we will be offering kelp water tsukemen in a different form than ramen to communicate the appeal of kelp. What is kelp water tsukemen? “Tsukemen with noodles soaked in kelp water.” By adding noodles soaked in kelp water to hot soup, you can feel the flavor in your mouth, and these days it has become popular mainly in Tokyo. . The bowl of noodles is soaked in kelp water, which is a blend of Makonbu, Rishiri, and Rausu kelp, and Gagome kelp is soaked in it to thicken it.
