(Headquarters: Obu City, Aichi Prefecture, President and CEO: Satoshi Shimomura) will be operating “Shimomura Farm Directly Managed Yakiniku Restaurant Third Generation Shimomura Beef” (hereinafter referred to as We will be holding the “Second 5th Anniversary Thanksgiving Festival” at “Sandaime Shimomura Beef”).
Five years have passed since “Sandai Shimomura Beef” opened in Obu City in April 2019. We have been operating our store with the single-minded desire to have as many people as possible enjoy the experience of eating Shimomura Beef, a black-haired Wagyu beef known for its “overflowing umami,” “ultimate melt-in-the-mouth,” and “soft texture.” Following the “first round” held on April 23rd (Tuesday), we will hold the “5th Anniversary Thanksgiving Festival” with additional sales of “premium gift certificates” and
“all-you-can-drink for 500 yen” to express our daily gratitude. As the second part, we will create an opportunity for you to enjoy “Shimomura Beef”.
Also, May 12th (Sunday) is Mother’s Day. In addition to eating and drinking in the store, we also offer great value take-out items such as “A5 Grade Sirloin” and “5th Anniversary Akami,” which are useful for family get-togethers to express “thank you” to mothers at home. We also have a wide selection of meat. Our company has been operating for 80 years for three generations with the support of the local community, with the management philosophy of “Continuing to produce safe and delicious beef, and providing smiles and vitality to everyone.” Regarding “Sandaime Shimomura Beef”, we will continue to work hard together with the cows to make our customers happy over the next 5 to 10 years.

Genuine “Wagyu” is not a cross between Holstein and Wagyu beef, but is made from pure Japanese black cattle. “Shimomura Beef”, which has been pursued by three generations in Obu City, Aichi Prefecture for 80 years, is delicious enough to satisfy everyone, and until the most recent carcass competition, it has won the “Aichi Prefectural Governor’s Award” nine times in a row. This is Kuroge Wagyu beef that is consistently high quality and has won awards. Shimomura beef, raised with lots of love, contains 30 times more glutamic acid, the umami ingredient, than regular Wagyu beef, and has the following characteristics:
1. Soft texture
Soft but not too soft. Poor-quality meat has a high water content, so the umami flavor is lost. Shimomura beef has a low moisture content and is aged, which increases the flavor and makes the meat tender. 2. Ultimate fatty melt-in-your-mouth texture
Easy to melt in your mouth. Shimomura beef fat has a high content of oleic acid and a low melting point. In other words, human skin Because the fat melts, it is mellow and has a good texture.
3. Overflowing with “umami”
The content of glutamic acid, which is the umami component, is 30 times that of regular Wagyu beef. That’s why the amount of amino acids in the meat is high, making it more flavorful and delicious.
