We are currently developing the eel restaurant Manu-tei. We will be opening our third Manunatei store on Friday, June 21st at 11am in Ogawa, Hanada-cho, Himeji City. *

Traditional grilled eel can be said to be a part of Japanese culture since ancient times, but I think most people don’t have the
opportunity to experience it. The taste of eel eaten at a specialty restaurant is exceptional. We want more people to know about Manunagi-tei as a restaurant where you can casually enjoy authentic eel.

The interior of the store is a calm Japanese space.
From the Himeji area, head east on National Route 372, and we will open on your left just after crossing Ichikawa. The interior of the restaurant is a Japanese-style space with spacious plain wood tables. All seats are chairs, with counters, tables, and private rooms available. All seats have chairs, so you don’t have to take off your shoes, and the seats are barrier-free, so you can sit in a wheelchair or with a stroller. Both seats are spacious and you can enjoy your meal in peace.

We purchase live Japanese eel called “katsu eel.” The food is stored in a “tateba” room in the store where the mud is removed until just before cooking. Place the eel in the special tub shown in the photo and expose it to cool water for about 1 to 2 days to expel the muddy odor of the eel that remains inside the body. We are particular about providing extremely fresh, safe, and delicious eel.

Manunagi-tei has a “Unagi-shi” who specializes in preparing eels. On the morning of the day, the eel chef prepares carefully selected live eels. Quickly open the belly with a Kansai knife and carefully skewer. When you think of cooking eel, you tend to think of severe training, but that’s a story from the past. At Manu-tei, we provide
easy-to-understand technical guidance and thorough experience in actual handling, so even those with no experience can begin handling it within six months.

Cooks with high heat exceeding 1000℃ and far infrared rays.
This is Kansai-style charcoal-grilled grilling, where the raw food is grilled all at once over high-temperature charcoal. Because it is grilled all at once using Bincho charcoal at over 1000 degrees Celsius, the skin is crispy and the flesh is crunchy, with a crisp texture and juicy fat flavor. After the grilling begins, add skewers to make sure the fire cooks evenly. There is no steaming process like in the Kanto style, and the Kansai style of grilling eel from raw to grill allows you to enjoy the original taste of the eel.
