Our company was founded in 1983 when our founder, who previously operated restaurants, bars, and discos such as “Maharaja”, opened “Shabuzen”, a shabu-shabu and sukiyaki specialty restaurant in Roppongi. We introduced an all-you-can-eat shabu-shabu menu, which was not popular at the time, and it was well received by many customers who said they could fully enjoy carefully selected high-quality beef. Currently, we have 11 stores in the Tokyo metropolitan area, Kansai, and Kyushu, including directly managed stores and franchise stores, and are used by many customers from overseas.
A fair where you can enjoy Akaushi, a natural blessing from Kumamoto and Aso, will be held at only 3 stores until the end of July. On July 31st, we will be holding the “Akaushi Fair,” where we will offer carefully selected rare “Akaushi” from Kumamoto Prefecture at a discounted price only at our Yotsuya store, Kagurazaka store, and Kawasaki store. This event will be held for a limited time until Wednesday. The all-you-can-eat “Akaushi shoulder loin” shabu-shabu, which normally costs 8,000 yen (tax included), is now available for 5,980 yen (tax included).
“Akaushi” is characterized by its low fat content, and its light taste, yet still has umami and tenderness. You can enjoy the rich flavor of red meat that spreads in your mouth luxuriously with shabu-shabu. It also contains a large amount of taurine, a type of amino acid, which is said to have effects such as improving liver dysfunction caused by alcohol and lowering blood pressure. In particular, the “Akagyu shoulder loin” that we are offering this time is eaten by dipping it in shabu-shabu stock to remove excess fat and bring out the depth of the meat’s flavor.
In addition, the “Akaushi Fair” all-you-can-eat menu also offers “Kuroge Wagyu Lean Meat”, “Yamagata Pork”, and “Assorted Domestic Vegetables”, which have the original flavor and soft texture of the meat. The head chef’s special Japanese-style soup stock, which is full of flavor, brings out the flavor of the ingredients even more, allowing you to enjoy delicious shabu-shabu.
Since our founding, we are celebrating our 40th anniversary this year, having been supported by customers who want to enjoy food with a focus on ingredients, quality, and taste. We will continue to spread the word about the spirit and taste of the Japanese people both
domestically and internationally through food culture, and provide services that are not only safe, secure, and delicious, but also the best in hospitality.

About “Akaushi” from Kumamoto Prefecture
Naturally healthy beef “Akaushi”
Japanese brown cattle (Akagewashu) are divided into Kumamoto and Kochi types, both of which are said to have originated from Korean beef. The current “Kumamoto Akaushi” is a unique breed that was improved by crossing the Simmental breed with a native breed raised in the Aso, Yabe, and Kuma regions, and was registered as Wagyu beef in 1944. “Akaushi” has excellent cold and heat resistance, is suitable for grazing, and has a docile personality that makes it easy to raise. The meat is mostly lean, contains a moderate amount of fat, and is flavorful, tender, and healthy. It has the aroma and taste inherent to Wagyu beef, and the deliciousness of the red meat and the balance of high-quality fat are the characteristics of the deliciousness of red beef.
Taurine, a type of amino acid, is found in large amounts in red beef meat, and taurine is said to have effects such as improving liver dysfunction caused by alcohol and lowering blood pressure.

About “Shabuzen”

Since its founding, “Shabuzen” has continued to focus on
all-you-can-eat options so that you can fully enjoy carefully selected high-quality beef, and has earned the support of many customers. We also have seasonal course dishes that go well with shabu-shabu and sukiyaki. We offer cuisine unique to a specialty restaurant and hospitality filled with gratitude, so that you can use it for a variety of occasions, including single-serve courses.
Special “raw sauce”
Homemade “raw sauce” made from over a dozen carefully selected ingredients without heating, additives, or chemical seasonings is indispensable for “Shabuzen.” Because the sauce tends to lose its freshness, each store prepares only the amount needed each day using a unique manufacturing method. The flavorful and deep-tasting “sesame sauce”, the “ponzu sauce” with the refreshing taste of citrus fruit mellowed with kelp and bonito stock, and the “special dashi sauce” further enhance the flavor of the meat and vegetables, making for a delicious shabu-shabu. You can enjoy it.
