We use soybean flour as the base of the dough and create a choux pastry with a unique combination that gives it a fluffy and chewy texture.The cream is made by slowly simmering lemons with their skin on, and using raw honey from Shimane Bee Farm. Hokkaido cream and cream cheese are used in the special jelly.
Add grated lemon peel to create a cream with a refreshing scent. Homemade lemon peel has the gentle sweetness and texture of raw honey, and the slight bitterness and sourness of lemon peel, which goes perfectly with the cream.
