What is craft salmon?
Craft salmon, as defined by the Craft Sake Brewery Association, is an alcoholic beverage that is “based on Japanese sake (sake)
manufacturing technology, uses rice as an ingredient, and incorporates processes that cannot be legally adopted with conventional sake.” A new type of alcoholic beverage that allows you to freely create a variety of flavors by adding fruits, herbs, spices, etc. to rice and rice malt and fermenting them together. Under the Liquor Tax Law, it is classified as “other brewed liquors” rather than “sake”, and in June 2022, the Craft Sake Brewery Association was launched, and nine companies including LIBROM and Pukupuku Jozo (as of June 2024) is a member.

“Hops, Mandarin Oranges, and Mint” Product Overview ~Juicy, complex fruit flavor and refreshing aftertaste~
A collaboration between select shop UNITED ARROWS, craft salmon LIBROM, and Pukupuku Jozo has been realized. We blend and ferment rice from Fukushima and Fukuoka with three auxiliary ingredients: hops, which Pukupuku Jozo specializes in, LIBROM’s standard mint, and mandarin oranges, which is reminiscent of the UNITED ARROWS brand color. Ta.
In order to avoid a monotonous taste, the mandarin oranges produced in Fukuoka Prefecture are ground and fermented without removing the skin, which gives the mandarin oranges a strong aroma, complexity, and slight bitterness along with the hops. By using mint, you can create a refreshing feeling that is typical of Japanese summer. In order to synergistically bring out the taste and aroma of mandarin orange and mint, we selected VISTA and CITRA hop varieties, which have a citrusy and herbal feel.
The koji is a blend of yellow koji and white koji, creating a well-balanced sweetness and sourness. The alcohol content is 10%, which is lower than regular sake.
The aromas of each ingredient are beautifully intertwined, giving it a sweet and juicy flavor, while the effervescence from fermentation and the coolness of mint make it refreshing to drink.
*Please be careful not to squirt when opening the cap as it has a foamy feel due to yeast activity.

Created by Rika Nishiyama (marutt Inc.), a designer living in Minamisoma City, Fukushima Prefecture, who creates the Pukupuku Jozo labels. The design combines LIBROM’s logo “flower”, Pukupuku Jozo’s logo “raccoon dog”, and UNITED ARROWS’ brand color “orange”. Based on the image of juicy and refreshing taste, the pixel art depicts craft salmon sake making as if going on a new and unknown adventure. The pixel art “raccoon dog” is also used as a motif on long T-shirts and caps, which are collaboration goods between UNITED ARROWS and Pukupuku Jozo.

Pukupuku Jozo Co., Ltd.
Phantom Brewery (a non-existent brewery) was founded in Minamisoma, Fukushima Prefecture, with the aim of “increasing the number of fields along the coast of Fukushima through alcohol.” Based on the concept of “sake that dissolves the boundaries between different cultures,” they brew sake that combines craft beer culture and technology. Currently, they are renting space in sake breweries inside and outside the prefecture and bringing in rice from the Fukushima coast for brewing, and are preparing to open a sake brewery in Minamisoma City in the summer of 2024.
