[Background of the initiative]
Summer 2018. I, Takahashi, went to the Saga Prefecture Ariake Sea Fisheries Cooperative Association, which I had been working with for some time, to discuss another matter, and they said, “Mr. President Takahashi, you have come at just the right time. Please take a moment to consult with me.”

While doing so, I was introduced to someone in Chiba Prefecture who was researching lactic acid fermentation of seaweed, and we started making products together. And completed! ! Unfortunately, however, the product was unable to find any effective functions and ended up being just a “seaweed aqueous solution”.
But because of this experience, I was able to move on. Thank you very much. [Efforts toward full-scale product development]
If we give up at this point, we will not be able to meet the expectations of the fishermen. With this in mind, I was introduced to Professor Kobayashi, who is researching lactic acid fermentation at Saga University’s Faculty of Agriculture in 2020. Since we needed evidence, we proceeded with our research with the cooperation of the Food and Cosmetics Division of the Saga Prefectural Industrial Technology Center. We also created a group to develop products. This is the Saga Seaweed Processed Products Export Council
(established in November 2020). (Members: Sun Nori Co., Ltd. (President Matsuo), Nishikai Pharmaceutical Co., Ltd. (President Gondo), Saga Frozen Foods Co., Ltd. (Chairman Koga), Office Takahashi Co., Ltd.) With the establishment of the council, product development progressed at an accelerated pace. By the end of December 2023, we were able to commercialize a discolored seaweed lactic acid bacteria fermented liquid that has immunostimulatory effects. It has been five years since former Councilor Matsuo called for this.

In the future, in order to release it into the world as a product, I would like to stabilize the lactic acid bacteria culture and step up to becoming a “functional food” while receiving support from subsidies and subsidies.
We would also like to apply for the “Saga Lab Challenge Cup 2024” held by Saga Prefecture and gain wide recognition.
